Apple Cinnamon Crumb Cake

Soft cinnamon cake, tender apples, and a buttery crumble topping make this the perfect treat for welcoming fall. Serve it warm for breakfast, an afternoon snack, or dessert with a scoop of vanilla ice cream.

Ingredients

For the Cake

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1½ tsp cinnamon
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup sour cream
  • 2 medium apples, peeled and diced

For the Crumb Topping

  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • Pinch of salt
  • 5 Tbsp unsalted butter, melted

Directions

  1. Preheat oven to 350°F. Grease an 8×8 or 9×9-inch baking dish.
  2. Whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, beat butter and brown sugar until fluffy. Add eggs one at a time, followed by vanilla.
  4. Mix in the sour cream, then gradually add the dry ingredients until just combined. Fold in the diced apples.
  5. Spread batter evenly into the prepared pan.
  6. Make the crumble by combining flour, brown sugar, cinnamon, and salt. Stir in melted butter until large crumbs form.
  7. Sprinkle generously over the cake.
  8. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let cool slightly and serve warm.

Drizzle with a simple vanilla glaze, add chopped pecans to the crumble, or serve warm with vanilla ice cream.
